Turkey Chili

Turkey Chili

Serves 6 - 8

Ingredients

1 stick MagicMix

2 pounds minced turkey

2-3 tablespoons olive oil

1 cup onions, chopped

4 cloves garlic, chopped

2 large tomatoes, diced

1 cup celery, chopped

1 cup red pepper, chopped

1 can red kidney beans (15 oz. opened and drained)

1 cup chicken stock or plain hot water

1 teaspoon sea salt (or to taste)

1 pinch black pepper, freshly ground

Shredded cheese, Mexican mix to sprinkle on top

Sour cream for topping chili in the serving bowl

Cilantro, freshly chopped, as garnish

Turkey Chili

Directions

  1. Heat oil in a deep, non-stick pan and add onion, garlic, celery and red pepper. Sauté for 2-4 minutes.
  2. Add MagicMix and stir.
  3. Add tomatoes, mix, and sauté for another 2-4 minutes.
  4. Add turkey, stir well and sauté for 2 more minutes before reducing the heat to low. Cover with a lid and let simmer for another 6-8 minutes.
  5. Add red kidney beans, salt and chicken stock or water. Stir well and let simmer without lid for 1 minute. Replace the lid and let the turkey chili simmer for another 8-10 minutes.
  6. After cooking (approximately 25 minutes total), turkey should be fully cooked. Uncover and give a deep and strong stir through the chili.
  7. Adjust the seasoning to taste (if needed). Garnish with fresh cilantro, serve in a bowl with optional topping of cheese and sour cream.
