Seared Scallops

Ingredients

Seared Scallops

  • 1 tablespoon MagicMix
  • 8–10 sea scallops
  • 2 tablespoons olive oil
  • 3–5 cloves garlic, peeled and crushed
  • ½ teaspoon sea salt
  • ½ teaspoon honey
  • 1 tablespoon lemon zest

Directions

  1. Preheat a cast iron skillet in a 425°F oven.
  2. Toss all ingredients together in a large mixing bowl.
  3. Place the oven-heated skillet on the stovetop over medium heat.
  4. Add the scallops and the mixing bowl contents to the hot skillet.
  5. Stir gently, spreading the scallops so they can sear for 2–4 minutes.
  6. Using tongs, turn the scallops and immediately return the skillet to the hot oven.
  7. Let the scallops roast for 6–8 minutes. Stir and mix the ingredients once during roasting, being careful not to break the scallops.
  8. Remove the skillet from the oven and serve the scallops over a bed of greens or a bowl of pasta.
