Seared Scallops

Serves 4 - 6

Ingredients

1 stick MagicMix

8-10 sea scallops

2 tablespoons olive oil

3-5 cloves garlic, peeled and crushed

½ teaspoon sea salt

½ teaspoon honey

1 tablespoon lemon zest

Seared Scallops

Directions

  1. Pre-heat cast iron skillet in 425 degree (F) oven.
  2. Toss all ingredients together in a large mixing bowl.
  3. Once heated, put skillet on stove burner on medium heat.
  4. Add the scallops and mixing bowl contents to the hot skillet.
  5. Stir, spreading the scallops so they can sear for 2-4 minutes.
  6. Using tongs, turn the scallops, and immediately return the skillet to hot oven.
  7. Let scallops roast for 6-8 minutes. Stir and mix ingredients once during the roasting process making sure not to break the scallops.
  8. Remove skillet from oven and serve scallops over a bed of greens or a bowl of pasta.
