Roast Beets and Carrots

Roast Beets and Carrots

Serves 4 - 6

Ingredients

1 ½ teaspoons MagicMix

2 red beets, cut into thick, finger-size strips

2 carrots, cut into same shape as beets

¼ cup sunflower seeds

1 avocado, peeled, pitted and cut into 4-6 pieces

2 cups arugula  

2 teaspoons extra virgin olive oil  

1 tablespoon freshly-squeezed lemon juice  

¼ teaspoon salt -- or to taste

Freshly ground black pepper - to taste

Roast Beets and Carrots

Directions

  1. Toss beets and carrots in olive oil. Add MagicMix and salt and toss again.
  2. On a cookie sheet, spread the seasoned beet pieces and bake, uncovered, at 430 degrees F for about 30-35 minutes.
  3. After 20 minutes, add carrots and sunflower seeds to the roasting pan and roast for another 12-15 minutes.
  4. Toss everything from the cookie sheet with avocado and lemon juice.
  5. .Toss ½ teaspoon of olive oil and Arugula together.
  6. Spoon a hearty serving of roasted beets and carrots over a bed of Arugula and serve with a slice of your favorite bread.
