Herbed Potato Salad

Serves 4 - 6

Ingredients

1 stick MagicMix

10-12 red baby potatoes, rinsed and halved, skin on

½ cup chopped mix of fresh chives and scallions

2 teaspoons olive oil

½ teaspoon Kosher salt

Herbed Potato Salad

Directions

  1. Using a vegetable steamer, cook potatoes until tender but still firm, about 20 minutes.
  2. Heat olive oil in a non-stick pan to its smoking point and then turn burner off.
  3. Add MagicMix and stir. Then add potato halves.
  4. Add salt and toss potatoes to coat with the spice blend and salt.
  5. Sprinkle chopped fresh chives and scallions on potatoes before serving.
