Grilled Chicken Salad

Ingredients

Chicken

  • 2 boneless chicken breasts

Marinade

  • 1 tablespoon MagicMix
  • 2 teaspoons champagne vinegar
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon tomato paste
  • 1 teaspoon salt
  • 2 teaspoons cooking oil

Greens

  • 2 cups Romaine lettuce, chopped
  • ½ cup grape tomatoes
  • ½ cup sliced baby cucumbers
  • Toasted pecans, slivered almonds, or toasted sunflower seeds, optional

Directions

  1. Pound the chicken breasts to ¼-inch thickness with a meat mallet or rolling pin.
  2. Mix all marinade ingredients in a small bowl and rub the mixture over the chicken. Allow to marinate for 1 hour at room temperature.
  3. Preheat grill to medium-high heat.
  4. Place the chicken on medium-hot, oiled grill grates. Cover and cook for 6–8 minutes.
  5. Baste with the remaining marinade and flip the chicken. Grill for another 5–7 minutes. Check for doneness and cook longer if necessary.
  6. Remove the chicken from the grill and let it cool to room temperature.
  7. Toss the greens, chicken, and dressing together in a large mixing bowl.
  8. Serve on a salad plate.
