Grilled Chicken Salad

Serves 4 - 6

Ingredients

2 chicken breasts, boneless

 

Marinade:
1 stick MagicMix
2 teaspoons champagne vinegar
1 teaspoon black pepper, freshly ground

1 teaspoon tomato paste
1 teaspoon salt
2 teaspoons cooking oil

Greens:
2 cups Romaine lettuce, chopped
½ cup grape tomatoes
½ cup sliced baby cucumbers
Toasted pecans, slivered almonds or toasted sunflower seeds (optional)

Grilled Chicken Salad

Directions

  1. Preheat grill to medium-high heat.
  2. Pound chicken breast pieces to 1/4” thickness with a meat mallet or rolling pin.
  3. Mix all marinade ingredients in small bowl and rub on chicken. Allow to marinate for an hour at room temperature.
  4. Place chicken pieces on medium hot, oiled grates on grill. Cover and cook for 6-8 minutes.
  5. Baste with remaining marinade and flip the chicken pieces. Grill for another 5-7 minutes. Check for doneness and cook longer if necessary.
  6. Remove from grill and let cool to room temperature.
  7. Toss greens, meat and dressing in a large mixing bowl.
  8. Serve on a salad plate.
