Grilled Chicken

Serves 6 - 8

Ingredients

1 stick MagicMix

4 chicken leg quarters and 2 breast halves

2 tablespoons garlic, crushed or paste

¼ cup cooking oil, olive oil or canola oil

½ cup lemon juice, freshly squeezed or pre-packaged.

1 teaspoon sea salt

2 teaspoons black pepper

½ teaspoon paprika (optional)

2 tablespoons mint, chopped for garnish (optional).

Grilled Chicken

Directions

  1. Preheat grill to maximum temperature. Once heated, lower at least two burners to medium heat and switch others off.
  2. Peel off skin if desired. Wash, pat dry chicken pieces (at room temp) and prick generously with fork.
  3. In a large mixing bowl, whisk together oil, MagicMix, garlic, lemon juice, salt, black pepper and paprika.
  4. Add chicken pieces, toss together, making sure all pieces are well coated with the MagicMix marinade.
  5. Cover bowl with plastic wrap and place in refrigerator for 30 minutes.
  6. Heat up your grill to high- gas, electric or charcoal.
    Brush heated grates with oil and place leg pieces in the center and breast pieces on the sides. Cover with lid and grill for 3-5 minutes, using the extra MagicMix marinade for basting.
  7. Open the lid, baste again with MagicMix marinade and turn the pieces over. You should see charred grill marks. Lower the heat to medium.
  8. Cover each piece loosely with foil, close the lid and continue cooking. Baste generously every 10 minutes. Total time for leg pieces should be 35-45 minutes and 25-30 minutes for breast pieces.
  9. When juices run clear and meat thermometer registers 160⁰, chicken is ready to be removed from grill.
  10. Remove to serving platter. Sprinkle with mint if desired. Allow to rest for 5 minutes.
  11. Once cooled, top with a dash of fresh sea salt, black pepper and lemon juice. Serve with your favorite bread, starch or salad.
