Crock Pot Chicken

Serves 6 - 8

Ingredients

1 stick MagicMix

2 pounds chicken, breasts and thighs, cut in boneless chunks

2 medium yellow onions, medium dice

1 tablespoon finely chopped Jalapeno

2 medium tomatoes, diced

2 tablespoons low fat, plain yogurt (optional)

3 tablespoons olive oil or cooking oil  

1 teaspoon salt, to taste

1 cup fresh or frozen broccoli florets  (optional)

1 medium green pepper, cut into bite- size chunks (optional)

Crock Pot Chicken

Directions

  1. Mix all ingredients in a slow cooker and set on high for 10 hours.
  2. If possible, stir the pot a few times throughout the duration.
  3. 15 minutes before scheduled finish, check chicken for doneness and taste seasoning. Adjust if necessary.
  4. Add broccoli florets and green pepper chunks (optional).
  5. Let simmer for another 15 minutes. Turn off and let sit for 15-20 minutes before serving with a grain dish of your choice.
