Chick Peas in Sauce

Serves 4 - 6

Ingredients

2 teaspoons MagicMix

1 can (32 ounces) chick peas

2 teaspoons ginger paste or powder

2 teaspoons cooking oil

1 cup chopped red onion

1 cup chopped ripe tomatoes

2 teaspoons low fat plain yogurt, whipped

2 teaspoons honey

¼ cup chopped cilantro

1 teaspoon salt -- to taste

2 teaspoons ginger juliennes

Chick Peas in Sauce

Directions

  1. Open chick peas, drain and wash under running tap water.
  2. Pour chick peas into a 2-quart sauce pan. Add 2 cups of water and 2 teaspoons of ginger paste/powder. Simmer for 10 minutes.
  3. Heat oil in a deep, non-stick frying pan, add chopped onion and fry until caramelized and (about 3-4 minutes).
  4. Add MagicMix and sauté for another 2-3 minutes. Add tomatoes and fry for 3 more minutes.
  5. Add chick peas, coat well with spices, and keep cooking for another 4-5 minutes.
  6. Mix in yogurt, cover the pan and simmer for another minute. Turn off heat and let rest for 2 minutes.
  7. Garnish with chopped cilantro and ginger juliennes before serving.
