Butternut Squash

Ingredients

Butternut Squash

  • 1 stick MagicMix
  • 4–6 slices butternut squash
  • 4–6 cloves garlic, well crushed
  • 1 teaspoon paprika
  • 1 teaspoon honey or brown sugar
  • 2 tablespoons cooking oil
  • ½ teaspoon salt, or to taste

Directions

  1. Toss all ingredients except the oil in a mixing bowl.
  2. Heat the oil in a non-stick pan and add the squash rounds. Make sure they are not crowding the pan, otherwise they may break.
  3. Loosely cover with foil for 2–3 minutes. Remove the foil and let cook for another minute, for a total of 3–4 minutes on the first side.
  4. Turn the squash rounds over and cook the second side for another 3–4 minutes.
  5. Serve with other vegetable dishes or enjoy as a standalone side.
