Broiled Salmon

Serves 4 - 6

Ingredients

1 stick MagicMix

2-4 pieces salmon filet, 6-8 ounces each, skin on

2 teaspoons red wine vinegar  

2 teaspoons garlic paste

1 teaspoon honey 

½ teaspoon Kosher salt - to taste

Ginger juliennes or cucumber ribbons

for garnish

 

      Broiled Salmon

      Directions

      1. Mix the MagicMix, red wine vinegar, garlic paste, honey and salt in small bowl, making a MagicMix paste.
      2. Coat fish pieces with the MagicMix paste from step 1 above and marinate in refrigerator for 2 – 4 hours.
      3. If using a grill, clean and oil grates, then heat to medium if gas/electric or ashed-over coals if traditional. When ready, place salmon pieces, skin side down. If using an oven, preheat the oven to 450⁰ (F), and set the oven rack about 6 inches from the heating element. Line a flat baking pan with aluminum foil, and spray with nonstick spray. Place salmon pieces in the pan, skin side down.
      4. Glaze with any mixture left in dish. If cooking on a grill, cook 4-5 minutes on both sides. If cooking in an oven, bake for 6-8 minutes and then broil under direct flame/heat for another 1-2 minutes.
        If cooking on a charcoal grill, place salmon pieces directly over medium heat and cook for 4 minutes on each side for an inch of thickness.
      5. To check doneness (after about 8 minutes), use a fork to flake fish. If it flakes, filets are ready. Skin may become dark and crisp, too.
      6. Garnish with cucumber ribbons or ginger juliennes before serving.
