Baked Cod

Ingredients

  • 1½ teaspoons MagicMix
  • 4–6 cod fillet pieces, about 1½ pounds, small to medium size
  • 2 tablespoons olive oil
  • 2 teaspoons garlic paste
  • 1 lemon slice, to squeeze over fish before serving
  • ½ teaspoon salt, or to taste
  • 1 teaspoon honey
  • Fresh parsley, finely chopped

Directions

  1. Preheat a cast iron skillet on the middle rack of a 400°F oven.
  2. Toss all ingredients except the lemon together in a bowl.
  3. Carefully place each piece of fish on the hot skillet without crowding the pieces. Bake for 10–12 minutes total.
  4. At the 5-minute mark, gently flip the fish pieces, being careful not to break them. Continue baking for another 5–7 minutes.
  5. Remove the skillet from the oven and squeeze fresh lemon juice over the fish. Serve with rice or any other grain dish of your choice.
