Baked Cod

Serves 4 - 6

Ingredients

1 ½ teaspoons MagicMix

4-6 Cod fillet pieces (about 1 ½ pounds), small-medium size

2 tablespoons olive oil

2 teaspoons garlic paste

1 lemon slice, to squeeze on fish before serving

½ teaspoon salt – to taste

1 teaspoon honey

Fresh parsley, finely chopped

Baked Cod

Directions

  1. Pre-heat a cast iron skillet on the middle rack of 400⁰ (F) oven.
  2. Toss all ingredients except lemon together in a bowl.
  3. Place each piece of fish carefully on the skillet without crowding them. Bake for total of 10-12 minutes.
  4. During the cooking process, at 5- minute mark, gently flip the fish pieces, being careful to avoid breaking them. Bake further for 5-7 minutes.
  5. After 15 – 18 minutes of total cooking time, remove the skillet, and squeeze fresh lemon juice on the fish. Serve with rice or any other grain dish of your choice.
