Red Lentil Hummus

Red Lentil Hummus

Serves 4 - 6

Ingredients

1 stick MagicMix

2 cups raw red lentils

4 cups hot water

1 cup chopped onion

3-5 cloves of garlic, chopped

1 medium tomato, chopped

½ cup green pepper, chopped

½ cup scallions, chopped

2 teaspoons olive oil

1 teaspoon sea salt

    Red Lentil Hummus

    Directions

    1. Place lentils, salt and water in a deep sauce pot, and simmer on low heat for 15-17 minutes or until lentils are soft and all water is evaporated. If necessary, add another ½ cup of water.
    1. In a separate pan, heat oil on medium. Sauté onion and garlic for 2-4 minutes. Add MagicMix, tomatoes, green peppers and scallions. Sauté for another 1-2 minutes.
    1. Divide the mix from step (2) into two equal portions, and reserve one half for garnish.
    1. In a blender, add cooked red lentils from step 1 and half of the spice mixture from step 2. Blend to a paste or hummus consistency.
    1. Transfer to a serving dish and garnish with remaining spice mix (reserved from step 2) before serving with pita bread bites or vegetable strips.
