Scrambled Eggs

Serves 4 - 6

Ingredients

1 teaspoon MagicMix

6-8 eggs

1/4 cup low fat milk

1 teaspoon butter  

1/2 teaspoon Kosher salt  

6-8 grape tomatoes (halved) for garnish

1/2 cup chopped baby spinach

Scrambled Eggs

Directions

  1. Whisk eggs, milk and salt together to a fluffy texture.
  2. Melt butter in a non-stick pan. Add and quickly stir in tomato halves, MagicMix and spinach, in that order. As soon as spinach leaves wilt, lower the flame and reserve half of tomato-spinach mix for garnish.
  3. With the vegetable mix still cooking on low, add the egg mix and stir. Keep stirring until eggs cook to desired texture.
  4. Before serving, garnish the prepared scrambled eggs with the reserved tomato-spinach mix.
