Roasted Butternut Squash

Ingredients

Roasted Butternut Squash

  • 1 tablespoon MagicMix
  • 4–6 slices butternut squash
  • 4–6 cloves garlic, well crushed
  • 1 teaspoon paprika
  • 1 teaspoon honey or brown sugar
  • 2 tablespoons cooking oil
  • ½ teaspoon salt, or to taste

Directions

  1. Toss all ingredients except the oil in a mixing bowl.
  2. Heat the oil in a non-stick pan and add the squash rounds. Make sure they are not crowding the pan.
  3. Loosely cover the squash for 2–3 minutes, then remove the cover and cook for 1 more minute, for a total of about 3–4 minutes on the first side.
  4. Turn the squash rounds over and cook the other side for another 3–4 minutes.
  5. Serve with your preferred entrée or enjoy as a standalone side.
