Cauliflower and Potato Wedges

Serves 4 - 6

Ingredients

1 ½ teaspoons MagicMix (½ stick)

2 cups small cauliflower florets

1 cup thin potato wedges, red or gold

3 teaspoons cooking oil 

½ teaspoon salt

¼ teaspoon freshly ground black pepper for garnish

½ cup chopped scallions for garnish

Cauliflower and Potato Wedges

Directions

  1. In a covered dish, sprinkle cauliflower and potato wedges with 2 teaspoons of water, then microwave on high for 5 minutes.
  2. Drain any extra water from the veggie mix or pat dry.
  3. Heat oil in a non-stick pan, add vegetables and sauté (without lid) for 2-3 minutes on low-medium flame.
  4. Add MagicMix and salt, sauté for 1-2 minutes on low flame, and turn off stove.
  5. Garnish with a pinch of freshly crushed black pepper and chopped scallions before serving.
